How to Make Shrimp & Grits
There's nothing quite like a steaming bowl of savory Shrimp & Grits. What are grits, you ask? Grits are made from corn or hominy that is ground into coarse meal and then boiled. Originating from the Old English word "grytt," or coarse meal.
Now that we understand the foundation of our dish, let's learn about the magic behind this popular Southern delicacy.
Ingredients:
- Grits
- Shrimp
- Milk
- Chicken stock
- Garlic powder
- Butter
- Chopped garlic
- Tomatoes
- Lemon juice
- Shredded cheese
- Lemon zest
- Tarragon
Steps:
Combine milk, chicken stock and garlic powder in a pot. Bring the mixture to a rolling boil. Next, add your grits to the pot, stir and reduce to medium-low heat.
Next, add butter to a saucepan and let it melt at medium-high heat. Then, add chopped garlic to the butter. Let it simmer until aromatic, but avoid burning it. Add onions and peppers to your saucepan and give them a nice stir.
Important note: Be sure to stir your grits intermittently to avoid lumpiness - let's keep them nice and smooth, y'all.
Add tomatoes, lemon juice and your fresh shrimp to the saucepan. Mix both the shrimp and grits. Now it's time to add the cheese to your grits (cheddar makes it better). Stir and season grits with salt and pepper. Then season your shrimp while also adding lemon zest and tarragon. Finish your sauce with fresh pepper.
